Farm Stays
Fresh and aged cheeses, carasau bread, suckling pig, vermentino, cannonau, myrtle and Seadas: Gallura on the table.
Farm Stays
Authentic Gallura, at the table
The farm stays of Gallura represent one of the most authentic and genuine gastronomic experiences that Sardinia can offer. In these family-run farms, lunch or dinner becomes a journey through Gallurese gastronomic tradition: everything is produced locally, from pork to wine, through cheeses, bread and garden vegetables.
Gallurese Farm Stay Cuisine
A typical farm stay lunch in Gallura includes:
Appetizers
- Cured meats of pork — salami, raw ham, coppa and aged sausage
- Cheeses — fresh pecorino, medium-aged and aged, with corbezzolo honey or myrtle jam
- Aromatic olives with wild fennel
- Carasau bread (music paper): the crispy Sardinian bread, ideal for pairing with appetizers
First Courses
- Gallurese soup (suppa cuata): the iconic dish of tradition — stale bread in layers with meat broth and cheese, gratin in the oven
- Malloreddus (Sardinian gnocchi) with pork ragù
- Pulicioni (sweet ravioli filled with ricotta and lemon zest)
Second Courses
- Suckling pig on a spit: piglet from Sardinian native breeds, slowly cooked on a spit for 3–4 hours and served on cork platters with myrtle essences. The flagship of Gallurese farm stays
- Lamb on the grill with rosemary, myrtle and juniper.
Desserts
- Seadas: fried pastry filled with fresh cheese and topped with honey or sugar
- Papassini: typical glazed dry sweets
Wines and Liqueurs
- Vermentino di Gallura DOCG — the typical white wine of the area
- Cannonau di Sardegna — the most well-known red of the island
- Nebbiolo di Gallura — the typical red of the Luras/Tempio hills area
- Myrtle — Sardinia's digestif par excellence, red (from black myrtle berries)
